There are just times when it seems to return to grandmother's recipes seem the thing to do. Times were simple, the work was hard, the kids played hard - no television, and desserts are simple but very good and satisfactory. Whether these cakes will bring you back to simpler times. Peanut Cake is so simple even beginning bakers can easily do so. This is also true of the cake cooked with spices and nuts Bundt Cake!


Groundnut cake SALTED

1 cup brown sugar
1 / 2 cup lard **
1 egg
1 cup sour milk *
Soda 1 c. Tea
Field 1 cup salted peanuts
1 1 / 2 cups flour

Preheat oven to 350 degrees.
Mix all ingredients in order listed. Grease and flour a 9 x 13 inch pan. Pour batter into pan and cook in the oven for 30-35 minutes.

Buttermilk * ** you can replace the lard with shortening or butter


BOILED Spice Cake

2 cups water
3 / 4 cup cooking oil
2 cups raisins
2 cups sugar
2 v. teaspoon cinnamon
2 v. teaspoon nutmeg
1 tsp teaspoon cloves
3 cups all purpose flour
1 tsp teaspoon baking soda
1 tsp teaspoon baking powder
2 eggs
1 tsp tsp salt

Preheat oven to 350 degrees.

In a 2-liter pot, bring water, cooking oil, raisins, sugar, cinnamon, nutmeg, cloves to a boil. Boil for 10 minutes then let cool. Add flour, baking soda, baking powder, eggs and salt. Mix the batter well and pour into a greased and floured 13 x 9 inch baking. Bake 30-40 minutes until cake tests done.

WALNUT Bundt

1 cup soft shortening
3 / 4 cup milk
4 egg, unbeaten
3 cups sifted cake flour
1 3 / 4 cups sugar
2 v. teaspoon baking powder
1 1 / 2 tsp teaspoon salt
2 v. Tea Vanilla extract
1 cup finely chopped walnuts

Preheat oven to 375 degrees.

In a large bowl sift together flour, sugar, baking powder and salt. Decreased shortening and 2 eggs, pour in the milk and vanilla. Beat 2 minutes at medium speed. Add 2 eggs, beating as before. Stir in walnuts. Put in a bundt pan or tube pan pan. Bake 1 hour. Let cool 10-15 minutes before removing from pan. Cool. Make a glaze by combining 2 tablespoons light corn syrup and 2 teaspoons of butter or margarine in a small saucepan. Boil 3 minutes but no more. Place walnut halves or pieces on top of cake, if you wish. Pour the glaze over the top spray to launch on the sides. Note: This cake freezes well.
