Camping Side DishesGoing on a picnic / camping overnight - Need Easy Dishes & Portable?

We are going camping tomorrow and I wanted to bring food that is premade so that we can simply heat the night camping on the grill.

So far, I made ribs and baked beans. Other ideas for some delicious sides? Please post link to the recipe. Thank you.

I would be happy to give you some recipes and include things .... below which need not be heated ... However, at this point the end, I would say, just run the market and pick a few things pre-made in the deli and produce departments. Potato salad, Mac salad, fresh fruit, etc. Maybe take a little too brownies or cookies.

But here's something you can do if you really insist!

Best Ever Wild rice picnic

1 package long grain and Uncle Ben's wild rice (cooked as directed on package and then chilled)
¼ cup vegetable oil
2 tablespoons cider vinegar
¼ cup onion, finely chopped
1 cup sliced celery
5 radishes, sliced
1 cup cucumber, diced

Mix oil and vinegar, mix the cooled rice. Add the onion and celery and mix well. Chill. Stir in the radish and cucumber before serving.

Coleslaw, my way

January 1 bag of books "Coleslaw Ready Pac" (about 8 cups finely chopped cabbage)
½ cup chopped onion
1 cup sour cream
½ cup mayonnaise
1 tablespoon sugar
1 tsp teaspoon seasoned salt
1 tsp teaspoon dry mustard
¼ c. teaspoon black pepper
1 tablespoon apple cider vinegar

1 - Mix the cabbage and sugar in a large bowl and mix well. Set aside for about 10 minutes.

2 - Mix the remaining ingredients in a medium bowl.

3 - Pour the dressing over cabbage mixture and mix well.

4 - Chill & serve. Sprinkle with paprika, if desired.

Stuffed Eggs

4 boiled eggs
¼ c. teaspoon Worcestershire sauce
1 tablespoon mayonnaise
1 teaspoon lemon juice
Speck mustard
few grains of salt
½ tsp tsp onion, finely chopped (or onion salt)

Cut the eggs lengthwise. Remove yolks.

mash yolks and mix with remaining ingredients.

Stuff egg whites with this mixture, heaping high generously.

Wrap separately in halves stuffed squares of plastic wrap or waxed paper.

(Or, just make some boiled eggs to have for breakfast?)

And here is a treat! Travel and the Rubbermaid container!

Strawberry Trifle

Note 1 Pkg Cake mix (yellow or white) -: just one layer, then mix works 9 oz!
1 16 oz package of frozen strawberry halves, thawed
April 1 package Vanilla pudding serving (prepared and refrigerated)
1 cup chilled whipping cream
¼ cup sugar

Bake cake 9x9x2 pans as directed on package. Cool. (If you used a 2-layer cake, reserve it for another use, or make another trifle?) Cut the cake into 8 pieces, cut each piece horizontally. Arrange half the pieces in a 2-quart glass serving bowl (or use a Rubbermaid container clear 9 cups), cut the pieces to fit bowl. Pour half the strawberries (with syrup) on the cake, spread 1 cup pudding over the strawberries. Repeat with remaining cake pieces, strawberries and pudding. Cover and refrigerate at least 4 hours.

In a chilled bowl, beat cream and sugar until firm (or just buy Cool Whip instead), spread over trifle. Sprinkle some toasted almonds and garnish with fresh strawberries, if desired. Pour into dessert dishes. Makes 8 to 10 servings.

Variation: Banana Trifle:
devils food cake replacement for yellow. Substitute 2 large bananas for strawberries. ¾ cup milk mixture into the prepared pudding. You can decorate with halved cherry!
