Does anyone know how to make Chinese rice crackers, because I love them. And I want to do it myself. Thank you Please give me some recipes with ingredients and directions. It would be a great help. Thank you!
1 c rice flour
1 / 2 C all purpose flour
1 egg white, lightly beaten
1 / 4 C oil
1 / 4 C Buttermilk or rehydrated
2 TB soy sauce or tamari, buttermilk powder
1 1 / 2 tablespoon salt
Only the attacker used a light meal with a pot of green tea. ~ 325 F. 15 to 20 minutes Preheat oven to 325 F. ~ Mix the flour and salt in a large bowl or food processor. Add oil and mix until the mixture resembles coarse crumbs. Stir in soy sauce and egg white. Stir in enough buttermilk, gradually, to form a dough that holds together in a ball. Divide the dough into 2 equal portions for rolling. On a floured surface or pastry cloth, roll to 1 / 16 inch thick. With a sharp knife or cookie cutter, cut into 2 inch circles or squares. Place the crackers on a lightly greased or parchment lined baking sheet. Prick each with a fork in two or three places. Bake for 15-20 minutes or until crisp, turning once during cooking. Cool on a rack. Yield: 70-80
Just buy them at joes trader. I tried several recipes for rice cakes, but none of them work.
