Health Snack RecipesWhat are cheap and healthy snack recipes, fast?

There's a party in my class tomorrow, and we are obliged to put a lot of snacks for the class. Meaning, snack bites that can be distributed. However, I do not have much money for recipes, I'm not a great cook, and I want something healthy for those following a diet or health-freaks. Also, I do not want to just go buy something, I want it to be unique.
Ideas? Please help!

Black Bean Pinwheels

4 ouncesCream cheese
1 / 2 cup shredded Monterey Jack or Cheddar
1 / 4 cup sour cream
1 / 4 c. teaspoon onion salt
1 cup canned black beans, rinsed and drained
3 flour tortillas (10 inches)
1 (16 ounce) jar salsa

Itinerary:
1. Mix cheese, sour cream and onion salt with electric mixer at medium speed until well blended.
2. Place the beans in a food processor fitted with steel blade or blender container and cover. Blend until smooth. Spread thin layer of beans on each tortilla, cheese mixture, spread over beans.
3. Roll tortillas tightly. Refrigerate 30 minutes. Cut into 1/2-inch slices. Serve with salsa.

FRUIT MUFFINS (healthy snack)

1 egg
1 / 2 c. vegetable oil
3 / 4 c. milk
2 v. wheat flour
1 / 3 cup sugar
3 c. tea. yeast
1 tsp tea. salt
1 tsp chopped fruit (peaches, apples, prunes)
1 / 2 c. brown sugar (optional)

Preheat oven to 400 degrees. Use muffin cups or grease funds muffin. Beat the egg. Add the oil, milk and fruit. Stir in remaining ingredients all at once, just until moistened. Batter will be lumpy. Fill muffin cups 3 / 4. Bake until golden, about 20 minutes.

Healthy Snacks POPCORN

4 gal. popcorn
4 gal. size buckets of ice cream
3 / 4 c. butter
1 tsp tea. 4 tsp cinnamon and tea. sugar
1 / 4 C. Parmesan
Dry taco seasoning or chili

For each of the 3 quarts of popcorn Stir 1 / 4 cup melted butter and mix in the following: no butter Bucket # 2 - Add the cinnamon and sugar Bucket # 3 - Add 1 / 4 c. Parmesan Bucket # 4 - Add dry taco seasoning or chili

A healthy snack

1 tsp crunchy peanut butter
2 / 3 c. honey
1 / 2 c. powdered milk
16 Graham crackers, finely crushed or 1 1 / 4 cups bread crumbs

Mix peanut butter, honey and milk powder, mix until well blended. Add cracker crumbs, mix well. Grease hands and roll mixture into balls about size of ping-pong or less if you wish. Then roll in two coconut or wheat germ. Best if refrigerated.

I'm on Weight Watchers and I use this recipe for Chocolate Peanut Butter Balls all the time. This is a no-bake, healthy alternative to chocolate cookie that is easy and cheap!

Recipe:
1 / 4 cup (s) without scouring milk
2 v. tablespoons unsweetened cocoa powder
2 v. tablespoons sugar
1 / 4 cup (s) of crunchy peanut butter
1 cup (s) of uncooked oatmeal shaped
2 v. tsp canola oil


Combine milk, cocoa powder and sugar in a small saucepan over low heat. Bring to a boil, then remove from heat. Add peanut butter and oil and mix until incorporated melted.Stir oats. Make small balls smaller than a golf ball and place on a baking sheet lined with wax paper. Freeze for one hour or two after and keep in freezer until you're ready to serve, but do not worry, they do not melt!
