Do you have a penchant for good food comfort? We have here a menu of comfort food to please anyone and it is still acceptable for diabetics, too. For the main course, we Onion Meatloaf tasty. Meat Loaf has long been regarded as one of Americans favorite comfort foods. This recipe is simple with lots of flavor from the soup and stir together the recipe. Oats add a touch of "good-for-you" to this delicious dish. The vegetable casserole can be prepared after the meat loaf is baked in the oven and side during the latter part of the cooking time. It is a pot of cheese making it another good comfort food. Blackberries are often some of our favorite foods comfort. However, to alleviate this meal, we use them in a lighter way than the usual cobbler or pie. Try this dessert lightest BlackBerry that uses the new Phyllo Cups for Blackberry.


Meatloaf TASTY ONION

1 envelope (1 oz) onion soup mix recipe

2 lb. ground beef

1 cup dry bread crumbs

1 / 2 cup quick-cooking oats

2 eggs, lightly beaten

3 / 4 cup water

1 / 3 cup ketchup

Preheat oven to 350 degrees.

Combine onion mixture and ground beef until well blended. Add the breadcrumbs and oats to the mixture. Add eggs, water and ketchup. Use hands to mix well. In a large bowl shape the mixture into a loaf. Bake about 1 hour until done.


CALIFORNIA BLEND vegetable casserole

2 pounds frozen California Blend vegetables

1 lb. Velveeta cheese

crackers 1 1 / 2 package Ritz or Town House

1 1 / 2 sticks butter

Cook vegetables according to package directions. Drain. Place vegetables in a saucepan 9x13 inches. Cut cheese into cubes and spread over vegetables. Melt butter. Crush crackers into fine crumbs, mix with butter and sprinkle with cheese. Bake at 350 degrees for 20-25 minutes.

BLACKBERRY CUPS

6 sheets of filo pastry, frozen, thawed

cooking spray

1 pint fresh blackberries

2 v. tablespoons Splenda

1 cup sugar-free Cool Whip

1 carton (6-oz) peach yogurt lite cream style

Preheat oven to 400 degrees. Get out 6 large ramekins.

Cut the phyllo into 4 pieces. Place 1 sheet phyllo on a work surface keeping the remaining sheets covered with plastic wrap and a damp cloth. Lightly coat a piece of the first sheet of phyllo dough with nonstick cooking spray and place in a large cream cup. Place second piece of the first sheet on top of the coin in the cup, alternating corners, spray with cooking spray. Repeat with the other two parts, alternating corners. Repeat this procedure with remaining 5 sheets of dough in the remaining 5 cups. Place ramekins on a baking sheet and bake about 15 minutes or until lightly browned. Cool to room temperature.

Although phyllo cups cooked, combine the blackberries and sugar in a small bowl and let stand for 15 minutes. Mix Cool Whip and yogurt in medium bowl. Reserve 1 / 2 cup raspberries for garnish. Fold the berries into the remaining yogurt mixture. Pour mixture into cooled phyllo cups. Garnish with reserved fruit.
